Chorizo Frittata

Ingredients: (Serves 4-6 people)

  • 450g D'Orsogna Chorizo or Cacciatora sliced
  • 10 eggs 
  • 500g pottatoes peeled and sliced
  • 1 brown onion, sliced 
  • 1 punnet of cherry tomatoes, cut in half
  • 3 Tablespoons of olive oil
  • 3 Tablespoons of cream
  • Salt and pepper 

Preparation:

Preheat oven to 200 degrees

In a baking dish, toss potatoes, onion, sliced D'Orsogna chorizo with olive oil, salt and pepper to taste. 

Bake for 30 minutes or until potatoes are just tender.

In a bowl mix eggs with cream and pour over potatoes.

Top with tomatoes and bake for another 15 minutes or until golden and puffed.

Slice frittata into 3cm cubes, ready to serve as an anti pasta platter. Or use cold as a sandwich filling.
