Lentils with Ham, Onion and Cherry Tomatoes

 

Preparation Time: 30 minutes

Product:  D’Orsogna Ham

Ingredients (Serves 4-6): 

  • 2 tbsp olive oil
  • 1 onion peeled and fifi nely sliced
  • 1 carrot peeled and fifi nely sliced
  • 400g tin peeled tomatoes
  • 1 punnet cherry tomatoes,sliced in half
  • 2 cups puy lentils
  • 3 cups chicken or vegetable stock
  • 250g sliced ham, torn
  • 1 bay leaf
  • 4 tbsp parsley, chopped
  • Salt and pepper to taste

Method:

Heat oil in a casserole, add tinned tomatoes and bay leaf and cook until almost dry. Add some stock and deglaze pan.  Add lentils and remaining stock, cover with lid and cook in hot oven for 30 minutes.

Fry ham in a non-stick pan until golden, add ham and cherry tomatoes to lentils. Cook in oven for 15 minutes or until lentils are tender.
Check seasoning and stir in parsley.
