How to avoid making eggplant soggy

Eggplant can be a wonderful ingredient to use if you know how; the thing to remember is that they will absorb as much oil as you give them, so the best way to cook them is to spray slices on both sides with a small amount of olive oil spray, lay them out on a tray and season them with salt and pepper. Bake the slices in a hot oven(200°C) for about 10 minutes or until tender and golden.

(Alternatively you can grill the sprayed slices in a hot grill pan.)

From here, you can toss them through a salad, pickle them and serve them on an antipasto platter, or serve them as an accompaniment to meats such as lamb and chicken.
