Bacon & black bean nachos

Ingredients

200 g D'Orsogna Shortcut Bacon, diced
400 g Black beans, rinsed & drained
35 g Taco seasoning
Corn chips
Mozzarella cheese, grated
avocado
corn kernels
sour cream
tomato salsa

Method

Begin by heating a large non-stick fry pan over high heat. Once hot, add the diced bacon and cook, stirring occasionally, until all the pieces are golden brown and crispy.

Next, add the black beans to the pan, stirring them through the bacon to combine the flavours.

Sprinkle the taco seasoning over the mixture and stir well. Allow the seasoning to release its aroma, then pour in 1 cup of water and mix thoroughly. Reduce the heat to a simmer and let it cook for about 10 minutes, allowing the mixture to thicken.

While the bean and bacon mixture simmers, assemble the corn chips on a tray. Generously sprinkle cheese over the chips and place them in the oven to melt the cheese. Once melted, top the nachos with the bacon and black bean mixture, and finish with your choice of toppings for a delicious, hearty snack.
