Baked eggs with chorizo recipe

Ingredients

 100 g chorizo, sliced
 4 eggs
 400 ml passata
 100 thickened cream
 4 mushrooms, sliced
 1 onion, sliced finely
 1 tbsp garlic, minced
 olive oil
 salt & pepper
 bread, to serve

Method

In a fry pan over medium-high heat sauté the mushrooms, onion and garlic in olive oil until they start to soften, approx 5 mins.

Divide the mix into 4 individual serve oven-proof bowls, or one large dish. Spoon in 100ml of passata into each bowl.

Make a slight indent and crack an egg into each bowl, followed by 25ml of thickened cream into each bowl.

Top with a sprinkling of salt and pepper and the strips of chorizo.

Bake in a 200°C over for 15-20 mins or until the egg white is set. Serve with fresh bread.
