Cheesy Chorizo & Gnocchi Bake Recipe

Ingredients

 1 red capsicum, sliced
 1 red onion, sliced
 400 g jar of red wine and garlic pasta sauce
 500 g pack fresh gnocchi
 1 cup grated cheese
 1 tbsp tbsp olive oil
 Fresh parsley leaves, to serve

Method

Boil your kettle and heat an ovenproof frying pan over medium heat on the stove. Then preheat your grill on high heat.

While waiting for your pan and grill to heat up, slice both the capsicum and onion.

Next, add oil to your frying pan. Slice one end of each of the chorizo sausages and squeeze small meatball-sized portions into the frying pan and allow to cook for 1 minute or until they start to brown. Add in your sliced capsicum and onion. Once the onion begins to soften, add in your jar of sauce. Stir to combine.

While you wait for chorizo to cook further, pour your boiled water from the kettle into a large saucepan on high heat. Add your gnocchi into the saucepan and cook until the gnocchi begins to rise to the surface. Once cooked, drain the water.

Add the cooked gnocchi to the frying pan, stir to combine, and sprinkle grated cheese over the top. Then place your pan under the grill for 1-2 minutes until cheese is nice and melted. Top with parsley and serve.
