Chorizo, Zucchini, and Potato Skewers

Ingredients

400 g Natural Range Chorizo, sliced into bite-sized pieces
2 Medium zucchini, sliced into thick rounds
450 g Baby potatoes, parboiled and halved
2 tbsp Olive oil
1 tsp Smoked paprika
1 tsp Garlic powder
Salt and pepper, to taste
Wooden skewers, soaked in water for 30 minutes

Method

Preheat your grill or oven to medium-high heat.

In a large bowl, combine the sliced chorizo, zucchini rounds, and halved baby potatoes.

Drizzle the olive oil over the mixture and sprinkle with smoked paprika, garlic powder, salt, and pepper. Toss well to coat all the ingredients evenly.

Thread the marinated chorizo, zucchini, and potato onto the soaked wooden skewers, alternating between the ingredients.

Place the skewers on the preheated grill or arrange them on a baking sheet if using the oven.

Grill or bake the skewers for about 10-15 minutes, turning occasionally, until the chorizo is cooked through, the zucchini is tender, and the potatoes are crispy on the outside.

Remove the skewers from the heat and let them rest for a few minutes.
