Christmas Pasta Salad

 1 D’Orsogna Brothers Aus Double Smoked Shortcut Bacon pack
 3 cups Elbow pasta
 ¾ cup Tasty Cheese Block, grated
 ½ red cabbage, chopped
 420 g Corn kernels, drained
 2 Baby gem lettuces, shredded
 2 Tomatoes, diced
 1 continental cucumber, diced
 2 Green onions, thinly sliced
 2 tsp Extra virgin olive oil
Mustard Dressing
 1 cup Mayonnaise
 1 cup Sour cream
 1 cup Parsley leaves, chopped
 2 tsp Lemon juice
 1 tbsp Wholegrain mustard

In a large saucepan, cook your elbow pasta following the packet instructions. Once cooked, drain and set aside to cool.

Heat oil over medium heat in a large saucepan then cook D'Orsogna Brothers Aus Double Smoked Shortcut Bacon until golden then drain on a paper towel.

Combine mayonnaise, sour cream, parsley, lemon juice and mustard together then set aside.

In a glass serving bowl, add a layer of chopped cabbage, corn and half the pasta. Drizzle 3/4 of the dressing over the top. Place a layer of shredded lettuce on top.

Add diced tomato and cucumber to remaining pasta then place on top of the lettuce. Next, drizzle over the remaining dressing then sprinkle bacon, cheese and green onion.
