Crispy Gnocchi with Bacon & Mushroom

Ingredients

 500 g Gnocchi
 200 D'Orsogna Natural Shortcut Bacon, roughly chopped
 200 g Button mushrooms, sliced in half
 120 g Baby spinach leaves
 ½ Brown onion, roughly chopped
 ¼ cup White wine
 1 Garlic clove
 2 tsp Parsley
 Parmesan cheese, grated
 Olive oil

Method

Bring a large saucepan of salted water to a boil. Add the gnocchi and cook until the gnocchi rises to the surface. Drain the cooked gnocchi then transfer to a plate and set aside.

Add oil to a frying pan over medium heat then add gnocchi and fry until golden. Remove from pan and set aside. Add onion and garlic and cook until fragrant. Add D'Orsogna Natural Shortcut Bacon and mushrooms and cook until bacon is crispy and mushrooms are soft. Add white wine and baby spinach and cook until spinach is wilted.

To the pan, add the gnocchi, half the parmesan and half the parsley and combine.

Once heated through, serve between two bowls and top with remaining parmesan and parsley.
