Dark Cherry Christmas Spiced Ham

 1 D’Orsogna Mini Champagne Ham portion 750g
 3 tbsp Dark cherry jam
 1 tbsp Golden syrup
 ½ tsp Mace
 ½ tsp Nutmeg
 ¼ tsp Ground cloves
 ¼ tsp Ginger powder
 2 tbsp Apple cider vinegar

To begin, preheat your oven to 200ºC. In a mixing bowl, combine the dark cherry jam, golden syrup, mace, nutmeg, ground cloves, ginger powder, and apple cider vinegar to make the glaze. Next, score the ham in a criss-cross pattern and then use your hands to apply most of the glaze, reserving ¼ of it for later use.

Place the glazed ham in an oven dish lined with baking paper and bake it for 40-45 minutes, or until the top is caramelized and golden brown. Spoon the reserved glaze over the ham and let it sit at room temperature for 15 minutes before carving it.
