Deli Fresh Free Range Roast Chicken & Streaky Bacon Caesar Salad

Ingredients

100gm D’Orsogna Deli Fresh Free Range Roast Chicken, shredded
200gm D’Orsogna Rindless Streaky Bacon
200gm Baby Cos, shredded
100gm baguette bread slices
50gm parmesan, shaved or grated
½ cup good quality egg mayonnaise
4 anchovy fillets, finely chopped
1 tbs Worcestershire sauce
salt and pepper

Method

Lay the slices of bacon out in a single layer on non stick trays and bake at 200 degrees celcius for about 10 minutes or until crispy. Drain on paper towel to remove excess fat.

Lay the slices of baguette out on a tray, brush with olive oil and bake until golden. (This should take about 5 minutes, and you may need to turn the slices over halfway though cooking.)

Mix together the anchovies, mayonnaise and Worcestershire sauce and season with salt and pepper.

Mix together the shredded chicken, bacon, cos and bread slices and toss with the mayonnaise to coat everything really well.

Transfer to 4 bowls and top with shaved or grated parmesan.

TIPS

- We use a vegetable peeler to shave my parmesan from a block.

- Anchovies are optional, but even if you don’t like them, you should try them in this recipe, they taste great!
