Egg And Bacon Cup

Ingredients

12 rashers D’Orsogna Middle Bacon
1 dozen eggs, room temperature
½ head broccoli, cut into small florets
½ bunch chives, finely chopped
½ cup parmesan cheese, grated
1 tbsp olive oil

Method

Preheat oven to 200C

Cook bacon on low heat for about 8 minutes. Remove from pan while still pliable, not crisp. Cool on paper towels.

Grease your muffin tins with a little oil.

Put one piece of bacon into each hole, wrapping it around to line the sides. Crack the eggs in each hole. Top with about 4 small florets of broccoli and sprinkle liberally with parmesan.

Season with cracked pepper

Cook for about 15 minutes or until bacon is crisp. Watch closely.
