Fried Gnocchi with Crispy Cabanossi

Ingredients

300 g D'Orsogna Traditional Style Cabanossi, sliced
500 g Gnocchi, blanched and cooled
100 g Butter, softened
½ Danish Feta block, crumbled
¼ cup Extra virgin oil oil
3 Garlic cloves, sliced
1 Red chilli
1 Red onion, sliced
1 Bunch of chives, finely chopped
1 Bunch of Basil, leaves picked
1 Bunch of parsley, finely chopped
Parmesan, grated
Salt & Pepper to taste

Method

To a hot pan, add extra virgin olive oil and gnocchi on medium heat. Allow the gnocchi to form a crust before stirring.

Add D'Orsogna Cabanossi slices to the pan and increase the heat to high. Stir to combine the gnocchi and D'Orsogna Cabanossi until both are crispy.

Add onions, chilli, garlic, salt & pepper and stir to combine to cook for another few minutes.

Toss through butter and herbs to combine and remove from stove once the butter has melted.

Sprinkle the crumbled Danish feta and parmesan then serve.
