Ham & leek slice

Method
Place the butter into a large non-stick fry pan over a high heat. Once melted add the sliced leeks. Cook stirring regularly until they start to lightly brown and soften. This will take about 5 mins. Remove from the heat and place into a large mixing bowl.
Add 200g of the ham to the leeks, followed by the cheese and flour. Mix to combine.
Add the eggs and stir well to combine.
Pour into a lined baking dish (30cm x 20cm). Add the remaining ham to the top of the batter, pushing in a little.
Place into a pre-heated 170°C oven and bake for 45 mins or until it bounces back when touched. Allow to cool in the dish before placing onto a cutting board to slice.
