Ham Cheese & Mustard Gougeres

Preheat oven to 220°C. Line 2 large baking trays with baking paper.
Place 1 cup cold water, butter and a pinch of salt into a medium saucepan. Bring to the boil over medium-high heat. When butter melts, immediately add flour. Beat quickly with a wooden spoon until mixture forms a ball and pulls away from the side of the pan.
Remove from heat and cool for 5 minutes. Finely chop 100g of D'Orsogna Premium Australian Jarrah Honey Ham off the Bone and slice remaining 50g. Beat in egg, a little at a time until well combined and smooth. Stir in chopped ham, parmesan and mustard.
Using 2 spoons, spoon balls (about 3 tsp each) of mixture onto trays. Bake for 20 minutes or until golden brown and puffed. Allow to cool.
Meanwhile, combine sour cream and chives in a bowl. Fill gougères with chive cream and sliced ham.
