Ham, Egg & Potato Breakfast Hash

Ingredients

2 cup Premium Australian Jarrah Honey Ham off the Bone, roughly shredded
4 cup Potatoes
2 Eggs
1 Onion, diced
2 tbsp Fresh thyme
2 tbsp Garlic, minced
3 tbsp Butter
Spring onion, to garnish

Method

Bring a medium pot of salted water to a boil. Add diced potatoes and boil for approximately 10 minutes until tender.

Add diced onion and D'Orsogna Premium Australian Jarrah Honey Ham off the Bone to a frying pan with butter. Cook until onions have softened.

Drain cooked potatoes from their pan then add to frying pan with ham. Add thyme and chopped garlic and cook until potatoes start to brown.

Crack 2 eggs on top and serve once eggs are cooked. Sprinkle fresh spring onions on top then serve.
