Ham, Pea and Broccoli Gnocchi

Ingredients

 120 g D'Orsogna Cooked on the Bone Premium Leg Ham
 500 g Potato gnocchi
 3 cups Frozen broccoli
 3 cups Frozen peas
 40 g Unsalted butter
 1 tbsp Extra virgin olive oil
 2 Garlic cloves, crushed
 Extra virgin olive oil, to serve
 Finely grated parmesan, to serve

Method

To cook the peas and broccoli, add to a heatproof bowl with boiling then set aside for approximately 2 minutes until heated through. Once the peas and broccoli are cooked through, drain and set aside.

In a large frying pan, add butter and oil on medium heat before adding the garlic and leftover D'Orsogna Ham. Cook for approximately 4 minutes or until the ham is slightly golden.

Cook the gnocchi in a large saucepan of boiling water following the directions on the pack. Once cooked through, drain the liquid and reserve 1 cup of pasta water to use later.

Into the saucepan, add the peas, broccoli, gnocchi, pasta water, and ham stirring to combine and increase the heat to high to bring to a boil. Cook for around 1-2 minutes stirring until the sauce reduces. Season with salt and pepper before dividing into 4 bowls. Drizzle with extra oil and top with parmesan.
