Ham & semi-dried tomato cucumber cups

Ingredients

200 g leg ham, diced finely
2 cucumbers
6 semi-dried tomatoes, diced finely
50 ml sour cream
1 tbsp curry powder
Lemon slices & chives, to serve

Method

Take a fork and run it along the edges of the cucumbers. Discard the top and bottom parts, and slice the remaining part into 3 cm-long pieces. Then, using a melon baller, scoop out the insides of the cucumber pieces, being careful not to cut all the way through.

Combine the D'Orsogna Leg Ham, semi-dried tomatoes, sour cream, and curry powder in a mixing bowl.

Using a spoon, fill each cucumber piece with the mixture, then place a slice of lemon and some chives on top. Arrange the filled cucumbers on a wooden board or platter and serve.
