Ham, Zucchini & Carrot Fritters

Ingredients

3-4 D’Orsogna Natural Double Smoked Ham slices
2 large carrots, spiralised
2 large zucchini, spiralised
2½ cup frozen corn
2 spring onions, thinly sliced
1 sprig curry leaves
¼ tsp turmeric powder
½ cup self-raising flour
1 clove garlic, chopped
2 tbsp coriander, chopped
½ cup milk
2 eggs, lightly beaten
½ tsp sea salt flakes
½ tsp crushed pepper
3-4 tbsp vegetable oil

Method

Combine zucchini, carrot, garlic, onion, eggs, corn, spring onion, coriander, curry leaves, turmeric, sliced ham torn into pieces and self-raising flour in a large bowl. Season with salt and pepper. Add milk and eggs. Mix well forming a thick batter.

Heat oil in a large frying pan on medium heat. Spoon ¼ cup batter in pan. Spread out to form 4 small flat rounds. Repeat to make 4 more fritters. Cook for 3-4 mins, each side, or until golden brown. Transfer to a plate lined with paper towel. Cover loosely to keep warm.

Repeat with remaining mixture, adding extra oil if needed. Serve fritters with your favourite relish, salad or mayonnaise.
