Salami & zucchini fritters

 100 g salami, diced
 1 cup zucchini, grated
 1 cup plain flour
 2 eggs
 ½ cup ricotta
 50 g parmesan, grated
 salt & pepper
 oil, for frying

Combine the salami, ricotta, zucchini, eggs, flour, parmesan, salt and pepper and stir until well combined.

Fry spoonfuls of the fritter mix in hot oil until crispy and golden then serve.
