Potato Gnocchi with Hungarian Salami, Tomato & Parsley
Ingredients
500gm potato gnocchi
50ml olive oil
150gm Hungarian salami, diced
1 red onion, diced
1 clove garlic
1 cup diced tomato
¼ cup parsley, roughly chopped
50gm Parmesan cheese, grated
salt and pepper
Method
We generally prefer to make our own gnocchi at home, but if you’re looking for a dinner you can throw together in 5 minutes, there are plenty of brands of pre-made gnocchi in the supermarket these days. This simple combination of salami, tomatoes, Parmesan and parsley is a real crowd pleaser. Serve it with some nice crisp salad leaves.

Bring a medium saucepan of water to the boil.

Sauté the salami, onion and garlic in the olive oil for 3 minutes.

Heat the gnocchi in boiling water for 2 minutes, drain and add to the onion and salami mixture.

Toss through with the diced tomato, Parmesan and parsley and season with salt and pepper.
