Roast Crackling Leg Ham with Golden Syrup Baked Apples

Ingredients

 1 ¼ tsp Extra virgin olive oil
 6 Red Apples
 6 Thyme Sprigs
 ¼ cup Golden Syrup

Preheat your oven to 240°C (220°C for fan-forced). Line a roasting pan with aluminium foil for easy cleanup. Pat the ham rind thoroughly dry with paper towels, as this helps the crackling become crisp. Place the ham in the prepared pan, rub a pinch of salt into the rind, and drizzle with 1/4 tbsp of the olive oil, ensuring it’s well coated.

Place the ham in the preheated oven and bake for 1 hour or until the rind is golden and crispy. Keep an eye on the crackling to prevent it from overcooking. Once done, remove the ham from the oven, cover loosely with foil, and let it rest for 30 minutes to retain its juiciness.
