Smashed Potatoes with Bacon and Cheese

 1 D’Orsogna Brothers Aus Double Smoked Shortcut Bacon 200g pack, diced
 1 kg Baby potatoes
 ½ cup Sour cream
  cup Pizza cheese
 2 tbsp Panko breadcrumbs
 2 ½ tbsp Extra virgin olive oil
 1 tbsp Fresh chives, freshly chopped

Preheat oven to 180 degrees. Toss baby potatoes with oil, salt and pepper then bake for 40 minutes on a large baking dish.

On a medium frying pan, cook diced D’Orsogna Brothers Aus Double Smoked Shortcut Bacon until golden. Place on a paper towel to drain oil.

Use a fork to crush each potato. Sprinkle pizza cheese and breadcrumbs over top then continue to back for another 15 minutes. Next, top with bacon, sour cream and chives.
