Method
Wash sweet potato well and pierce with fork all over, oven bake approx 45 mins on 190 degrees till soft. Saute in butter, Mild Tasty Sticks, corn, capsicum and onion. When sweet potato is cooked and slightly cooled, cull boat shape keeping sweet potato aside. Mash removed sweet potato with little butter and milk. Mix the mash with the sautéed mixture and fill/load your sweet potato. Optional garnish with chopped chives, grated cheese and enchilada sauce.
