Chorizo Waffles

Ingredients

 250 g Self raising flour
 23 Spring onions, thinly sliced
 ½ cup Extra virgin olive oil
 ½ cup White Wine
 ¼ cup Water
 Salt flakes & freshly ground white pepper to season
 Cheese, olives and labne, to serve

Method

Mix together the olive oil, water and wine in a large mixing bowl. Gradually add the flour, whisking well to form a smooth batter similar in texture to a thick pancake batter. Add chopped spring onion and D'Orsogna Natural Chorizo and mix well.

Plug in your waffle maker and heat it up. Put 2 tablespoons batter in the mould, close the lid and cook until golden and the scent of wine and chorizo permeates the room.
Serve warm or at room temperature with cheese and olives or labne.
