Bacon and Broccolini Tart

Ingredients

 200 g D'Orsogna Natural Streaky Bacon, roughly torn
 320 g Ready-rolled puff pastry, at room temperature
 125 g Broccolini, cut into 2
 2 tsp Milk
 4 tbsp Cream cheese
 75 g Parmesan, grated
 1 Baby spinach & rocket salad pack, to serve

Method

To prepare, set the oven temperature to 200°C. Take the pastry and remove it from its paper, then use a sharp knife to cut out 4 squares each measuring 11cm. Make a 1cm border along the edge with the same knife and score the centre. Place the squares on a baking tray lined with nonstick baking paper and apply milk to the border using a brush. Bake for 10 minutes or until they are puffed up.

While the pastry is baking, place a frying pan over medium heat. Put the bacon in the pan and cook until it turns crisp, usually for 2-3 minutes. Once done, remove the bacon from the pan and place it on kitchen paper to drain excess oil. Then, add the broccolini to the pan and fry for 1 minute.

After removing the pastry squares from the oven, flatten their centres, and place 1 tablespoon of cream cheese into each. Next, divide the bacon and broccolini among the pastry squares, and sprinkle some parmesan cheese over the top. Return the squares to the oven and bake for an additional 10 minutes or until the cheese has melted, and the pastry turns golden. Serve alongside the salad.
