Place the diced D'Orsogna Streaky Bacon into a large pot on the stove.
Cook over medium heat until it's almost browned and the fat has melted.
If there's additional bacon fat in the pot, remove most of the fat while keeping 3 tablespoons in the pot.
To the pot, add in the diced bacon cooking for approxmately 15 minutes or until the onions nicely brown and caramelise.
Lower the heat on the pot, before adding the balsamic vinegar, brown sugar and mustard. Cook for approxmately 30 minutes while stirring until the mixture comes thick and jam-like.
Remove from the heat, allow to cool for 15 minutes, and season with salt and pepper. Add the jam to a well-sealing container or glass jar, and refrigerate.
