BLAT Loaded Pasta Salad

Ingredients

4 D'Orsogna Streaky Bacon slices, chopped
250 g Dried farfalle pasta
400 g Tomato medley punnet, halved
⅓ cup Shaved parmesan
⅓ cup Fresh basil leaves
50 g Mixed salad leaves
1 Avocado, sliced
2 tbsp Extra virgin olive oil
2 tbsp Italian red wine vinegar
1 tsp Wholegrain mustard

Prepare your pasta by cooking it in a large saucepan of boiling, salted water as per the instructions on the package. Once done, drain the pasta and give it a quick rinse under cold water. Ensure it's well-drained before using.

While your pasta is cooking, get a frying pan nice and hot over high heat. Add the D'Orsogna Streaky Bacon and give it a good stir. Cook it for 3 to 4 minutes until it turns wonderfully crisp. Once done, place it on a paper towel to drain any excess grease.

In a large serving bowl, mix together the tomato, avocado, fresh salad leaves, fragrant basil, cooked pasta, and crispy bacon. Toss everything together and set aside.

In a little bowl, combine the oil, vinegar, and mustard. Season the mixture with some salt and pepper. Give it a good whisk to blend everything together. Drizzle the dressing over the salad, then toss it all together. Finish by sprinkling with some Parmesan before serving.
