BLAT Loaded Pasta Salad

Ingredients

 250 g Dried farfalle pasta
 400 g Tomato medley punnet, halved
  cup Shaved parmesan
  cup Fresh basil leaves
 50 g Mixed salad leaves
 1 Avocado, sliced
 2 tbsp Extra virgin olive oil
 2 tbsp Italian red wine vinegar
 1 tsp Wholegrain mustard

Begin by cooking the pasta in a large saucepan of boiling, salted water according to the package instructions. Once cooked, drain the pasta and give it a quick rinse under cold water to stop the cooking process. Ensure the pasta is well-drained to avoid excess water in the salad.

While the pasta is cooking, heat a frying pan over high heat. Add the D'Orsogna Streaky Bacon and stir to ensure it cooks evenly. Let it cook for about 3 to 4 minutes until the bacon becomes wonderfully crispy. Once cooked, transfer the bacon to a paper towel to absorb any excess grease.

In a large serving bowl, combine the cooked pasta, diced tomato, cubed avocado, fresh salad leaves (such as mixed greens or rocket), fragrant basil leaves, and the crispy bacon. Toss everything together gently, ensuring the ingredients are evenly mixed.
