Chicken and Spinach Strata

Method
Preheat your oven to 180C degrees.
Thaw the spinach by microwaving it on high for 4 minutes. Once thawed, make sure to squeeze out any excess water.
Create the egg mixture by putting eggs, milk, parmesan, salt and pepper into a bowl and whisking them together until they are fully combined.
Using a baking dish that measures 25cm x 25cm, spread half of the bread pieces onto the base of the dish.
Create layers in the baking dish by placing spinach at the bottom, followed by pieces of D'Orsogna Chicken and then top it off with half of the cheese.
Place the remaining bread on top of the layer of cheese. Press down on the bread to compress it, as this will allow for even soaking of the egg mixture.
Pour the egg mixture over the entire dish, ensuring that all the bread is evenly covered.
Sprinkle the remaining cheese on top of the dish, and then press down on it to help the bread absorb the egg mixture.
Allow the dish to sit for a minimum of 15 minutes, and ideally 30 minutes.
Cover the baking dish with foil and place it in the oven to bake for 20 minutes. Afterwards, remove the foil and continue baking for 10 minutes or until the top is golden brown. Serve immediately and add a sprinkle of parsley on top, if desired.
