Chinese Style Baked Oysters

Ingredients

 24 Fresh oysters, opened
 150 g D’Orsogna Shortcut Bacon, diced
 200 g Course rock salt
 30 ml Soy sauce
 30 ml Oyster sauce
 20 ml Rice wine vinegar
 10 ml Sesame oil
 1 tsp Ginger, grated
 1 Green chilli, finely sliced

Method

The word ‘oyster’ in Cantonese sounds like ‘good things’, so they are often on the New Year menu. This recipe will give you a fresh new way to cooking oysters with chilli and asian flavours combined with tasty D'Orsogna diced bacon.

Fry the diced bacon until slightly crispy and caramelised.

Whisk together the sesame oil, soy sauce, oyster sauce, vinegar and ginger.

Lay the oysters out in their shells on a baking tray with an even layer of rock salt covering the base.

Place ½ tsp of the bacon and ½ tsp of sauce on each oyster and bake in a preheated 200 degree C oven for about 10 minutes or until the oysters are heated all the way through and just firm.

Serve in the tray (the rock salt will keep them warm) with a couple of slices of green chilli on each oyster.
