Chorizo Queso Dip

Ingredients

200 g D'Orsogna Natural Chorizo, finely chopped
1 tbsp Olive oil
30 g Butter
2 Garlic cloves, crushed
2 tbsp Plain flour
1 ½ cup Evaporated milk
½ cup Mozzarella
½ cup Cheddar
½ cup Pecorino
⅓ cup Sour cream
½ cup Tomato salsa
½ Red onion, finely sliced
Chopped coriander, to serve
Pickled Jalapeños, to serve
Corn chips, to serve
Hot sauce, to serve (optional)

Method

Heat the olive oil in a medium fry pan over medium heat. Add D'Orsogna Natural Chorizo and fry for 5 mins. Remove half the chorizo.

Return the pan to the heat and add the butter and garlic. Fry for 1-2 mins.

Add the flour and fry for 2-3 mins, until starting to brown. Add the evaporated milk and bring to a boil.

Sprinkle over the mozzarella, cheddar and pecorino then stir until melted and smooth.

Top with the remaining D'Orsogna Natural Chorizo, sour cream, salsa, onion, coriander and jalapeños. Serve with corn chips.
