Chorizo Tortellini Soup

Ingredients

 800 g Diced Tomatoes
 3 cups Reduced Salt Chicken Stock
 250 g Fresh Cheese Tortellini
 1 cup Tomato Sauce
 3 Carrots, peeled and diced
 1 Onion, finely diced
 1 Celery stick, finely chopped
 1 ½ tsp Italian Seasoning
 1 tsp Minced Garlic
 1 tsp Salt

Method

In a large soup pot, cook D'Orsogna chorizo over medium-high heat until it turns a lovely golden color.

To the pot, add the carrots, onion and celery and cook until the onion has softened. Next, add Italian seasoning, garlic, and salt, and cook for an additional minute.

Pour in the broth, tomatoes, and tomato sauce, then bring the mixture to a simmer over medium-high heat. Reduce the heat to medium, cover the pot, and allow it to simmer for approximately 15 minutes, or until the carrots are nearly tender.

Mix in the tortellini, cover the pot, and let it simmer for 5-6 minutes until the tortellini is tender. Then, it's ready to serve.
