Creamy Baked Chicken with Bacon

Ingredients

 2 Leek and Bacon dip tubs
 4 Chicken Breast fillets
 ¾ cup Mozzarella, grated
 2 Spring Onions, thinly sliced
 1 Salad mix, to serve

Preheat your oven to 180°C. Use a little grease to coat a large ovenproof dish. Then, spread half of the dip evenly over the base of the prepared dish.

Begin by warming a large non-stick frying pan over medium-high heat. Toss in the bacon and cook, stirring occasionally, for about 2 minutes or until it's nicely browned. Once done, transfer the cooked bacon to a plate lined with paper towel to absorb excess oil. Now, generously sprinkle half of the cooked bacon over the dip in your prepared dish.

Place the chicken in the frying pan and cook for approximately 2 minutes on each side or until it develops a golden brown color. Season with your preferred seasoning. Transfer the browned chicken over the bacon mixture in the baking dish. Spread the remaining dip evenly over the chicken and sprinkle with the mozzarella cheese. Bake in the oven for about 25 minutes or until the mozzarella turns golden brown and the chicken is thoroughly cooked. Allow the dish to rest for 5 minutes before serving.

Garnish the chicken mixture with chopped spring onions and the rest of the bacon. Plate alongside a fresh salad mix.
