Grilled Pineapple & Ham Bruschetta

Ingredients

 6 Sourdough Slices
  cup Red Wine Vinegar
 100 g Spring Onion & Chive Cream Cheese
 ¼ Small Pineapple, peeled, core removed, thinly sliced
 ¼ Continental Parsley, leaves picked
 2 tsp White Sugar
 1 Small Red Onion, very thinly sliced
 Extra Virgin Olive Oil Cooking Spray

Method

Combine vinegar and sugar in a microwave-safe bowl. Microwave on high for 1 minute or until sugar has dissolved. Add onion and stir to combine. Season. Set aside for 30 minutes to pickle lightly.

Heat a chargrill pan over high heat. Spray both sides of pineapple and sourdough slices with oil. Grill pineapple for 2 minutes each side or until lightly charred and caramelised.
Transfer to a plate. Cover to keep warm. Grill sourdough for 2 minutes each aside until toasted.

Drain pickled onion. Place sourdough on a serving board. Spread with cream cheese, then top with ham, pineapple and onion. Sprinkle with parsley. Season with freshly ground black pepper. Serve.
