Ham and Potato Rosti

Ingredients

300 g D'Orsogna Cooked on the Bone Premium Leg Ham
40 g Unsalted butter
2 Potatoes
1 Onion, thinly sliced
2 Garlic cloves, finely chopped
1 ½ tsp Cayenne pepper
Olive oil
Parsley, finely chopped

Method

Preheat your oven to 180 degrees. Start peeling and grating your potatoes before squeezing any excess liquid through a strainer.

Into a bowl, place the potato, ham, onion, garlic, cayenne pepper most of the parsley then stir to combine. Season the rosti mixture with salt and pepper.

In a large ovenproof frypan, heat oil and butter over medium heat making sure to coat the entire pan. Spoon the potato rosti mixture into the hot pan and press down with a spatula to make an even layer.

Reduce the heat on the stove to low-medium and cook the rosti until the potato is almost cooked. Place the pan into the oven and bake for another 15 minutes until nice and golden. Serve with a sprinkle of parsley.
