Salami & zucchini fritters

Ingredients

 100 g salami, diced
 1 cup zucchini, grated
 1 cup plain flour
 2 eggs
 ½ cup ricotta
 50 g parmesan, grated
 salt & pepper
 oil, for frying

Method

In a large mixing bowl, combine the diced salami, grated zucchini, ricotta cheese, and grated Parmesan cheese. Crack the eggs into the bowl and add the plain flour. Season with salt and pepper according to your taste preferences. Stir all the ingredients together until they are thoroughly mixed and well combined. The mixture should have a consistent texture, with the ingredients evenly distributed.

Heat a generous amount of oil in a frying pan over medium-high heat. The oil should be hot enough to create a sizzle when you add the fritter mixture, but not so hot that it starts to smoke.

Using a spoon or small scoop, drop spoonfuls of the fritter mixture into the hot oil. Flatten them slightly with the back of the spoon to form small patties. Fry the fritters for about 2-3 minutes on each side, or until they turn golden brown and crispy. Ensure that you do not overcrowd the pan; cook the fritters in batches if necessary.
