The Perfect Crackle Ham

Preheat your oven to 240 degrees. Remove your D'Orsogna Ham from the packaging before patting it dry with a paper towel to remove any moisture. Place the ham rind side up on a baking tray and add to your fridge overnight to continue to dry overnight.
Remove ham from the fridge and use a sharp knife to score the rind before rubbing salt flakes over the top. Add your ham on a rack inside a large roasting pan to set aside to continue to draw out any moisture.
Place the ham into the oven to bake for approximately 40-50 minutes until the rind begins to crackle. Lower the heat to 200 degrees in your oven before cooking for another 1 hour until the crackle is golden brown. Before removing it from the oven, test your cooked ham with a thermometer to ensure the temperature reads 60 degrees.
Once cooked through nicely, remove the ham from the oven and transfer to a board ready to carve.
