Pineapple Glazed Ham

Ingredients

 425 g Can of pineapple pieces in juice
 3 cups Apple juice
 2 cups Brown sugar
 2 Cinnamon quills
 25 g Ginger, finely grated
 4 Star anise
 1 tsp Fennel seeds
 1 tsp Five-spice powder

Method

In a saucepan, add all ingredients except the ham and combine to boil over medium heat. Reduce the heat to low-medium heat to simmer for 30 minutes until reduced. Strain the glaze into a jug and set it aside.

Preheat your oven to 200 degrees and line a roasting pan with baking paper. Using a knife, cut around the ham shank and under the skin around the edges of the ham. Remove skin and discard.

Pour half of the prepared glaze into the roasting pan and place the ham fat side down onto the glaze. Pour the remaining glaze over and ham and roast for 40 minutes before turning over the ham to baste and place in the oven to roast Continue to baste the ham every 10-15 minutes for 40 minutes until nicely caramelised.

Remove cooked ham from the roasting pan and serve on a platter. Drizzle any remaining glaze over the top of the ham.
