Ramen Carbonara

Ingredients

 200 g D'Orsogna Streaky Bacon, diced
 250 g Parmesan, shredded
 1 Dried Ramen Noodle Packet
 2 tbsp Extra Virgin Olive Oil
 3 Garlic Cloves, minced
 3 Eggs, beaten
 Salt and Pepper, to taste

Method

Bring a large pot of water to the boil and season with salt. Cook the ramen noodles according to packet instructions.

Meanwhile, place a fry pan over medium heat and add in the olive oil. Add in the bacon and fry. Add in the garlic and toss through. When the ramen is cooked add to the pan and toss through with the bacon and garlic. Turn the heat off.

Place the eggs into a large mixing bowl and add in the shredded parmesan. Add in the ramen and mix through liberally. Add 1 ladleful of the ramen cooking liquid into the bowl to create a sauce. Season to taste.

Serve into serving bowls and garnish with some freshly chopped parsley.
