Red Lentil, Tomato and Smokey BBQ Bacon Soup

Ingredients

 1 l Chicken stock
 420 g Condensed tomato soup can
 1 cup Red lentils (dry uncooked)
 1 Onion, diced
 2 Garlic cloves, finely diced
 2 Sprigs of thyme
 2 tbsp Olive oil
 1 Bay leaf
 Salt and pepper to taste

Method

Place a large pot on the stove over a medium high heat and add the olive oil to the pot.

Add the onion and garlic to the pot and saute until the onion starts to brown. Stir regularly so it doesn’t stick to the pot.

Add the diced D'Orsogna Smokey BBQ Streaky Bacon and cook, stirring regularly until the bacon starts to brown and the aromas are released.

Add the carrot, condensed tomato soup, red lentils, chicken stock, bay leaf and thyme. Stir through so that everything is well combined.

Bring to the boil and then reduce to a simmer. Cook for 20 minutes uncovered, stirring occasionally so the lentils don’t stick. Remove the bay leaf and thyme sprig before serving. Season with salt and pepper to taste.

Remove from the heat and serve with bread.
