Smoky BBQ Bacon Burger

Ingredients

 500 g Beef mince
 4 Brioche rolls, halved and toasted
 ½ Brown onion, roughly grated
 ½ cup Dried breadcumbs
 2 tbsp Fresh Oregano, finely chopped
 1 Garlic clove
 1 Egg, lightly whisked
 2 tsp Olive oil
 4 Vintage cheddar cheese slices
  cup Tomato relish
 2 tbsp Chipotle BBQ sauce, plus extra to serve
 Baby rocket leaves, to serve
 Crispy onion rings, to serve

Method

In a mixing bowl, combine the mince, onion, garlic, chipotle barbecue sauce, oregano, breadcrumbs and egg. Add some salt and pepper and mix everything together with your hands. Divide the mixture into 4 equal portions. Shape each portion into a patty that's about 1cm thick.

Add some oil to a large pan and heat it over medium heat. Fry the patties for 5 minutes. Flip the patties and put a piece of cheese on top of each one. Cook for another 5 minutes or until the meat is cooked through and the cheese has melted. Move the patties to a plate and cover them lightly with foil to keep them warm.

As you are cooking the patties, heat up a chargrill pan to medium-high. Place the brioche buns, cut side down, on the pan and cook for 2 minutes or until they are slightly toasted. Remove them from the pan and set them aside.

While the pan is hot, put half the bacon on the chargrill and cook it for 3 minutes on each side or until it's crispy. Move it to a plate covered with a paper towel to keep it warm. Repeat this process with the remaining bacon.

Spread a layer of tomato relish on the bottom of each bun. Add rocket leaves, patties, and bacon on top. Drizzle some extra chipotle barbecue sauce and put the top of the bun on. Serve with onion rings on the side.
