White Bean Soup with Bacon & Kale

Ingredients

4 D'Orsogna Brothers Shortcut Bacon, diced
1 medium onion, diced
2 medium carrots, halved and sliced
2 stalks celery, sliced
4 cloves garlic, minced
2 cans white beans
2 cup chicken broth
1 bunch kale, coarsely chopped
1 tbsp lemon juice

Method

Heat a large pot over medium high heat. Add the D'Orsogna Brothers Shortcut Bacon and cook until golden brown.

Add the onion, carrots, and celery and cook until the onions turn translucent

Add the garlic and for another minute.

Add the white beans with their canning liquid and chicken broth to the pot while increasing the heat and let simmer. Once combined, reduce the heat and let simmer for 10 minutes.

Add the kale, stir and let the soup simmer for another 5 minutes.

Stir in the lemon juice and then your soup is ready to serve
