How to make vegetables flavourful

Chargrilling vegetables on a BBQ or in a grill pan is a great way to keep them healthy and give them a lovely smoky flavour.

Grill slices of eggplant, zucchini, button squash, red onions, capsicums, and tomatoes to serve with BBQ’d meats, tossed through a salad, or marinated in olive oil, vinegar, garlic and lots of herbs to serve on an antipasto platter.

Spray or brush the slices lightly with oil, season them with salt and pepper, and grill them on a hot BBQ until they get nice dark char lines on both sides.
